Provolone cheese, which originated in southern Italy, has a velvety and rich taste. You can eat it melted or cold, depending on your taste. Provolone can be sweet, young (provolone dolce), spicy, salty (provolone piccante) and smoked (provolone affumato). Provolone goes well with vegetables on the grill and is best known as a sandwich and table cheese. The cheese goes well with aged red wines. It can be served with hot breads, lavash and pastries.
